Blueberry Cornbread Muffins

1/2 cup cornmeal
1/2 cup flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup water
1 cup blueberries
Box of your favorite cornbread, follow box directions and add a hand full or two of blueberries
Add cornmeal, flour, sugar, baking powder and salt to bowl. Mix. Add water. Mix.
Add blueberries and gently mix with spoon.
Pour mixture into 8×8 pan that’s been sprayed with nonstick spray. Bake for 22-24 minutes. Allow to cool and cut into squares.
Easy Peasy Cornbread Muffins

2 boxes corn muffin mix
1/3 cup whole milk
1/3 cup orange juice
Splash vanilla extract
Sprinkle cinnamon powder
Paper muffin cups (12 or more)
Place all ingredients in a bowl……. Change Change Change
Blend all and let batter rest for about 10 minutes….. Change Change
Place paper baking cups into muffin tin, then pour batter into paper baking cups, filling only halfway……Repeat until all batter is used….. Change Change Change
Preheat oven to 400 degrees and bake muffins for 15-20 minutes or until tops are golden….. Change Change Change
Remove from muffin tin, let cool for about 10 minutes, eat and enjoy !!!! I like to put a pat of butter on top of mine !!! Change
Sugar and Spice Buttermilk cornbread

2 c all purpose flour
2 c corn meal
2 tbsp baking powder
1 heep tsp salt
1 1/2 tsp cumin
1 tsp chili powder
6 tbsp sugar
10 tbsp cold, salted butter
1 c milk
1 c buttermilk
Butter cast iron skillet, place in oven and preheat at 400°
Mix all dry ingredients together well. Cut cold butter into small cubes, use your hands to incorporate butter into mixture very well. I find starting with my knuckles gets it going, then I mash it with my finger tips. It should hold together when you make a fist with it.
Make a well in center, add 2 slightly beaten eggs and both milks.
Use a baking spatula and fold batter over itself until all is blended.
Carefully take cast iron out of your preheated oven and add mixture. Bake for 25 to 30 minutes or until top is golden and tooth pick comes out clean.

200 g Corn flour 🌽
100 g Oatflour 🌾
100 g Oats
2 pieces Eggs 🥚
100 g Olive oil
1 tsp Salt 🧂
1 tsp Sweetener
200 ml Vegetable Milk
250 g Feta Cheese
1 tsp Baking Soda
200 g Yoghurt
Crumble the Feta Cheese into smaller pieces. Preheat the oven 200Celsius of course.
Mix together the flour, salt, sweetener. Whisk the eggs until smooth and sour cream or yoghurt. Mix an add the milk than mix again. Add the oil and mix again. Change
The consistence of the batter should be quite thick. Change
Add the cheese to the batter, mix carefully.
Pour the batter into the muffin pan, but don’t overfill since it will raise in the oven a little bit. Change
Bake at 200 degrees Celsius for about 30 mins. Change Change
Honey Chipotle Corn Bread

1 1/4 cup milk
1/4 cup melted butter
1/3 cup sugar
1/4 cup honey
1 cup flour
3/4 cup corn meal
1/2 tsp baking powder
1 tsp salt
1/2 tsp ground chipotle powder
1 large jalepeno, deveined and diced
1/2 cup shredded habanero jack
Preheat oven to 400• F
In a large bowl, whisk together milk , butter, egg, sugar, and honey
Add flour, cornmeal, baking powder, salt , and and chipotle powder. When incorporated mix in jalepenos
Move to glass baking dish, bake for 20 minutes Change
Sprinkle habanero jack on top, place back in oven for about 10 minutes. Cornbread is done when a toothpick comes out clean. Change
