Cinnamon roll apple pie breakfast casserole 🍎 SUPER EASY

Serves 6-8 servings

  • 2 cans apple pie filling or any pie filling you like
  • 2 cans cinnamon rolls
  • Dash cinnamon
  • Steps

  • Preheat over to 400. Cut cinnamon rolls into quarters.
  • Pour pie filling in an ungreased glass or metal baking pan or you can use a pie tin and place cinnamon roll pieces on top.
  • Sprinkle the top with cinnamon and bake at 12-16 minutes. Let cool 5 minutes then drizzle the icing packet from the cinnamon rolls over the top.
  • Note: I added a drizzle of honey on top of mine before baking but it’s optional. You could also top with nuts. You could also drizzle with caramel sauce or top with vanilla ice cream.

  • 1 pack bacon
  • 1 yellow onion, chopped
  • 6 eggs, beaten
  • 1 bag frozen hash brown potatoes (I used a 30 ounce bag)
  • 1 (8 ounce) bag shredded cheddar cheese
  • 1 (16 ounce) container cottage cheese
  • 1 (8 ounce) block Swiss cheese(chopped into cubes)
  • 1/4 teaspoon parsley flakes
  • Sprinkle Black Pepper
  • Sprinkle salt
  • Butter cooking spray
  • Steps

  • In a large pan cook bacon and onion together until bacon is crisp and onions are wilted…..Drain grease……Let bacon and onion cool before adding to the rest of the ingredients……. Change Change Change
  • Combine all other ingredients in a bowl except for hash browns, then add to cooked bacon and onion….. Add hash brown potatoes to your cooking pan that has been sprayed with butter cooking spray……. Change Change Change
  • Add wet ingredients to hash brown potatoes and gently mix together, then bake, uncovered in a 350 degree oven for 1 hour or until casserole is lightly browned on top……. I added an extra sprinkle of parsley flakes to the top of my casserole…… Change Change Change
  • Let stand for 15 – 20 minutes, then cut into squares and enjoy !! Change Change

  • 7 eggs beaten
  • 1/4 cup milk
  • 1 red pepper chopped (optional)
  • 1 onion chopped finely
  • 3 medium or small potatoes diced finely
  • 1 bag low fat cheddar cheese
  • 1 lb loose sausage browned and drained
  • to taste Salt and pepper
  • Steps

  • Brown sausage, onion, potatoes, and peppers (and drain if needed)
  • Wisk eggs, milk, and seasoning and half the bag of cheese
  • Place cooked sausage and veggies in greased casserole dish
  • Pour egg mixture over and then top with remaining cheese
  • Bake at 350 for 55 min. Or cover and bake next morning for fresh breakfast

  • Bacon
  • Left over mashed potatoes
  • Sprinkle double cheddar cheese (2 light layers)
  • Baby spinach (2 layers between potatoes & fried veggies)
  • Mixture of crimini mushrooms sliced
  • Red onion sliced
  • Cherry tomatoes quartered
  • 5 eggs scrambled
  • Salt & pepper
  • Homemade bread pan fried to crisp
  • Steps

    40 mins

  • Cook bacon until crispy
  • Pan fry left over potatoes in bacon grease
  • Chop up mushrooms, red onion & cherry tomatoes and saute slightly
  • Layer potatoes, cheese x2, spinach x2, veggie mixture, bacon then pour eggs on top with more cheese
  • Cook at 400′ for 40 mins or until eggs are fluffy & set
